Another main dish is Baghali Ghatogh, a well-known dish from northern Iran, which is prepared in a plant-based version at the restaurant.
Sabzi Polo is also available at Noush in two different forms. In one version, herb rice is served with a plant-based fish substitute, while another option combines the rice with Persian aromatic herbs and a plant-based shrimp substitute. The ingredients used for these substitutes are made from plant-based components, starch and algae. The restaurant also serves Bandar-style rice with a plant-based sausage substitute, potatoes and onions, accompanied by saffron rice and a fresh salad.
The menu at Noush also includes saffron Tahchin, which is a plant-based version of this traditional Persian rice dish. Another rice-based option is festive saffron rice served with a plant-based chicken substitute, caramelised onions, Persian spices and barberries. In addition to the main dishes, several light meals and other plant-based combinations are also available.
The dessert section includes traditional saffron and pistachio ice cream as well as Persian Love Cake. The ice cream is prepared with saffron and pistachios, while the Persian Love Cake is made with rosewater, cardamom, pistachios and dried rose petals. Noush also offers separate menus for lunch and dinner, and a daily menu is available on Wednesdays and Thursdays.
Overall, Noush is a restaurant focused on plant-based Persian cuisine, offering traditional Iranian dishes prepared with plant-based substitutes. Stews, rice dishes, salads, starters and Persian desserts make up the main sections of its menu, while the restaurant itself is located in the Sants area of Barcelona.
